For a quick and easy dressing that can be used on any vegetable salad or side, whisk 2 TBSP olive oil, 1/4 c balsamic vinegar, 2 TBSP honey, season with salt and pepper. Pinched for time…buy a pre-made balsamic glaze (found at most markets near the vinegar) to top salads, roasted vegetables or even mixed berries.
