Summer brings the season of fresh fruits and vegetables! Packed with vitamins, minerals, antioxidants and fiber, produce provides a high-nutrient value with fewer calories.  Embrace all the in-season fruits and vegetables by tossing them into a frittata, smoothie, salad or just enjoy as a snack. The local farmer’s market is a great way to explore fruits and vegetables at their freshest (visit http://www.buylocalnebraska.org for market times and locations).  

Farmer's Market signFor a quick and easy dressing that can be used on any vegetable salad or side, whisk 2 TBSP olive oil, 1/4 c balsamic vinegar, 2 TBSP honey, season with salt and pepper. Pinched for time…buy a pre-made balsamic glaze (found at most markets near the vinegar) to top salads, roasted vegetables or even mixed berries.
